A little about each cacao...
Utcubamba Uttku (Amazonas, Peru):
This exceptional cacao is derived from award winning beans grown in a small-scale agroforestry. The cacao beans undergo a 7 day fermentation process (in wooden boxes). The post-harvest protocol helps to create a delicate aroma and unique flavour profile.
Farming: Cooperative - The farmers receive premium prices for high quality and organic certification.
Flavour Notes: Kumquat, Vanilla, Ylang ylang, Paradise apple.
Fazenda Bom Jesus (Alta Mogiana region in São Paulo, Brazil):
Fazenda Bom Jesus is a privately owned single farm, which employs just 15 people. Their passion for cacao and other crops they grow, is rooted in love for both the land and the craft. At Fazenda Bom Jesus, every step in the cacao-growing process reflects dedication, tradition, and a deep connection to nature. The cacao beans are not only organic certified, but also Demeter - standards are more stringent than organic standards and require farmers to preserve biodiversity and ecosystems.
Farming: Single farm.
Flavor notes: Apple, Mangosteen, Coffee.
Kablon Farm (Socsargen region in Mindanao, Philippines):
Kablon farm grows a mix of “criollo” (the cacao brought from Mexico in the 1700s) and newer hybrid genetics that were brought from Malaysia in the 1980s for disease resistance and higher yields. The distinct flavour of these beans is a result of four generations of Pantua family farming. This proud family of farmers are dedicated to customer satisfaction, which is second only to the commitment and equity they show their workers and local community.
Farming: Single farm.
Flavour Notes: Biscuit, Caramel, Banana, Red fruit jam.
Semuliki Forest (Region around Bundibugyo, Western Uganda):
Semuliki Forest cacao beans are sourced from Bundibugyo, a town and region known for cacao production. A supply-chain was made possible through the Latitude Trade Co., who established a transparent buying network and a centralized fermentation and drying program in 2017. A partnership of over 5,000 certified organic smallholder growers now produce award-winning specialty cacao, earning them a reputation of some of the highest quality beans in the world.
Farming: Social Enterprise.
Flavour Notes: Citrus, Cinnamon, Chocolate fudge.
Ransiki (West Papua Province, Indonesia):
Ransiki is the name of a village in the West Papua Province of Indonesia. It’s home to the Ebier Suth (‘Unity to Arise’) Cokran Cooperative, which was established in 2017 with the help of local stakeholders. Since then, the cooperative have helped to rehabilitate hundreds of hectares of original cacao plantation in Ransiki, which had gradually dwindled due to lack of interest and investment. This new unity is an integral part of West Papua’s Green Growth programme, and plans on the continued rehabilitation of cacao planation, as well as creating employment opportunities for the younger generation. Ransiki cacao beans are Forastero and Trinitario hybrid, which offer an unparalleled aromatic richness - it’s no surprise they’ve won Gold at the prestigious Cacao of Excellence Award, in Amsterdam.
Farming: Cooperative.
Flavour notes: Olive, Nuts, and Jasmine.
